Use Google Flights to find what works for you — start with your origin city and then just put “Europe” for the destination and indicate the month you’re interested (and a weekend, a week, etc.). Google will do all the work from there — it returns a variety of European cities and their prices. If you have a preferred airline, be sure to select it from the menu to return better results for you.
